🍪 HEART-HEALTHY PROTEIN COOKIE DOUGH
What if your cookie dough contained chickpeas, delivered approximately 13 grams of protein per serving—and still tasted like dessert?
This edible protein cookie dough is creamy, chocolatey, low in added sugar and completely safe to enjoy without baking. You would never guess chickpeas are the secret ingredient!
❤️ WHY I LOVE IT
Chickpeas provide plant-based protein and fiber, which can support fullness, digestive health and a heart-healthy eating pattern.
Almond butter and walnuts contribute mostly unsaturated fats. Walnuts are also one of the best plant sources of alpha-linolenic acid, or ALA, an omega-3 fatty acid.
Using powdered peanut butter and plant-based protein adds even more protein, while sugar-free syrup and chocolate chips keep the added sugar low.
🍪 HEART-HEALTHY CHOCOLATE CHIP PROTEIN COOKIE DOUGH
Makes approximately 8 servings
INGREDIENTS
• 1 15-ounce can chickpeas, rinsed, drained and patted very dry
• ⅓ cup natural almond butter
• 3 tablespoons unsweetened vanilla almond milk, plus more if needed
• 2 tablespoons Lakanto sugar-free maple-flavored syrup
• 1 teaspoon vanilla extract
• ¼ teaspoon cinnamon
• ¼ teaspoon almond extract
• Pinch of sea salt, to taste
• ½ cup PBfit powdered peanut butter
• ½ cup Sunwarrior Warrior Blend vanilla protein powder
• 2 tablespoons Lakanto sugar-free chocolate chips, or to taste
• 2 tablespoons chopped walnuts, or to taste
DIRECTIONS
Add the chickpeas, almond butter, almond milk, maple-flavored syrup, vanilla, cinnamon, almond extract and sea salt to a food processor.
Add the powdered peanut butter and protein powder.
Blend until completely smooth and creamy, scraping down the sides as needed. If the mixture is too dry, add additional almond milk one tablespoon at a time until it reaches a soft cookie-dough consistency.
Fold in the chocolate chips and chopped walnuts.
Divide into eight servings and enjoy immediately, or refrigerate for a firmer texture.
