Whip up my Fall Harvest Protein Pasta — a cozy, nutrient-packed dish that’s as good for your heart as it is for your taste buds! šŸ«¶šŸ’Ŗ

🄣 Ingredients (4 servings):

8 slices *Applegate turkey bacon**, chopped

1 medium *butternut squash**, cubed (ā‰ˆ4 cups)

1 ½ tsp *sea salt**

1 tsp *black pepper**

½ tsp *dried thyme**

8 oz *chickpea orzo pasta** (or other protein-rich pasta)

*¾ cup toasted walnuts** 🄜

*½ cup dried cranberries** šŸ’

Dressing:

¼ cup *apple cider vinegar**

2 Tbsp *extra virgin olive oil**

1 Tbsp *Dijon mustard**

1 Tbsp *maple syrup** (or Lakanto sugar-free syrup for lower sugar)

1. Roast the squash & bacon

   * Preheat oven to 400°F (200°C).

Ā Ā Ā * Toss cubed squash with olive oil, thyme, salt & pepper.

Ā Ā Ā * Spread on a sheet pan with the chopped turkey bacon.

Ā Ā Ā * Roast for 20–25 minutes until squash is tender and bacon is crisp.

2. Cook the pasta

Ā Ā Ā * Prepare chickpea orzo according to package directions.

Ā Ā Ā * Drain and set aside.

3. Toast the walnuts

Ā Ā Ā * In a dry pan over medium heat, toast walnuts for 3–4 minutes until fragrant.

4. Make the dressing

Ā Ā Ā * In a small bowl, whisk together apple cider vinegar, Dijon mustard, maple syrup, and olive oil.

5. Combine everything

Ā Ā Ā * Toss roasted squash, bacon, toasted walnuts, and dried cranberries with cooked pasta.

Ā Ā Ā * Drizzle with dressing and mix gently.

6. Serve warm
