🧡 Pumpkin Pie Bites (Heart-Healthy + Only 33 Calories Each!)

✨ Ingredients:

  • 1 cup canned pumpkin purée

  • ¼ cup mashed banana

  • 2 large eggs

  • 3 Tbsp. brown coconut sugar

  • 1 Tbsp. molasses

  • 1½ tsp. ground cinnamon

  • ½ tsp. ground ginger

  • ⅛ tsp. ground nutmeg

  • 4 Tbsp. Lakanto maple syrup

  • ⅔ cup lite coconut milk

  • Oat-milk whipped topping (for garnish)


🍽️ Directions:

  1. Preheat oven to 350°F (175°C) and lightly spray a mini muffin tin with coconut oil.

  2. In a blender, combine pumpkin, banana, eggs, coconut sugar, molasses, cinnamon, ginger, nutmeg, maple syrup, and lite coconut milk.

  3. Blend until smooth and creamy.

  4. Pour batter into mini muffin cups and bake for 20–25 minutes or until set.

  5. Cool completely, then top with a swirl of oat-milk whipped topping.
